Mom's curry chicken

Growing up as the first born American from a Jamaican family, it took me years to acquire the taste of authentic Jamaican dishes. As a child, not being able to handle spicy food, as well as not being able to extract the bones from the meat, made it a difficult task to embrace the Jamaican cooking that my mom would cook almost everyday. As a youth, I would love the chance to go over to another friends house for traditional American food like hamgurgers, or macaroni and cheese. While these American meals were considered fine dining to me back then, I was never able to appreciated the magnificient carribean delights that my mom had on the table almost every night of the week. It was not until I went to college and became engulfed in the world of mass produced, souless and loveless food, that I realized the treasures that I had been taking for granted so many years. Now as an adult, I visit my parents for home cooked meals as often as I can. I have even went so far as to learn how to prepare some of these meals myself, or find local restaurants that do. Even though I appreciate the fact that I can now have these foods more readily available, none of them compare to mom's. This food makes me think of my childhood and the love my mom showed by coming home and preparing a huge meal for us everyday after a long days work. Smelling the aroma of Jamaican cooking wafting through the air brings me back to those days. These memories invoke feelings of nostalgia, comfort and love.
